Vegan Greek Gyros Recipe

This vegan Gyros recipe will blow your mind – believe me!
In the heart of Greece, a culinary marvel has stood the test of time by combining mediterranean flavours with spices from the middle east – the iconic dish Greek Gyros. We will veganize Gyros in two ways in today’s recipe by using soya chunks and smoked tofu. Plus: We will serve this vegan Gyros with our must-have plant based Tzatziki / Talatouri made with soy joghurt - and some wonderful Greek tomato rice.

Ingredients
  

Gyros Spice Mix

  • 4 tsp Oregano
  • 2 tsp Parsley
  • 2 tsp Garlic flakes
  • ½ tsp Cayenne pepper
  • 2 tsp Coriander powder
  • 2 tsp Thyme
  • 2 tsp Sweet Paprika
  • 1 tsp Hot Paprika
  • 2 tsp Cumin powder
  • 1 tsp Rosmery
  • ½ tsp Lemon cest
  • ½ tsp Black Pepper

Tofu/Soy Chunks Spice Mix

  • 1 tsp Dark soy sauce
  • ½ tsp Miso paste
  • 1 tsp Sriracha Sauce
  • 1-2 tbsp Veggie broth / Salt
  • 1 tsp Mustard
  • 1 tsp Nutritional Yeast
  • 2-3 tbsp Plant oil - 2-3 tbsp
  • 1-2 tsp Corn starch (or other)

Vegan Tzatziki

  • 1 cucumber  - peeled and grated, squeeze out excess water after grating.
  • At least 4 cloves of garlic, minced
  • White pepper – ½ tsp
  • Salt or broth – to taste
  • Soy Joghurt – 250 ml
  • A shot of extra virgin olive oil
  • Lime juice or a shot of vinegar
  • (Talatouriu: additionally add 1 tsp of dried mint)

Instructions
 

  • If using tofu: Take out tofu from package and drain all remaining water. Cover tofu with a kitchen cloth and place something heavy on it in order to press out more of the excess water.
  • If using soya chunks: Put soy chunks into hot veggie broth for 20 minutes to soak up the water. Drain the lumps and wrench them out.
  • Mix soy chunks with your spice mix  and assemble either your marinated tofu or soy chunks on a piece of baking paper and put it in the oven or air fryer at 185°C for 6 minutes first.
  • After that, mix them with 1-2 tsp of the Gyros spice mix, olive oil and some thinly cut onions. Put them into the air fryer or oven again for 5 minutes.

Tomato Rice

  • Fry onions, garlic and bell pepper in a pan, add 2 cups of rice and stir. Add 2 tsp of Gyros spice mix.
  • Put tomato paste and 1 shot (2 cl) of balsamic vinegar into a cup and fill the rest up with water (cup 1). Use another cup of water (cup 2) to fill up your pot
  • As soon as the water starts to boil, put on a lit and turn the heat down to the minimum. After all water has vanished, take the pot off the stove and give your rice a good stir before serving.
